to tofu with love

i had a container of soft tofu to use up in my fridge. i hate that. i buy stuff sometimes at the market, feeling inspired but then time passes me by and the inspiration passes too. i am ashamed and embarassed to say it but sometimes i let time pass too long and the stuff goes bad and i have to chuck it. i'm still working on the balance of getting what i need and know i will use, but also catering to some impulses.

recently, thru the Daring Bakers, i came across a blogger who made a tofu spread/dip for her lavash crackers. i didn't exactly follow her recipe (i didn't have all the ingredients handy) but her dip inspired me. i've been trying very hard this year to eat something for breakfast everyday. i figured toast would be great with this tofu spread, carbs and protein and veggies! i only used half the container(there is only one of me who would eat this...) for the other half, i made a chocolate pudding.

Veggie Tofu Spread
adapted and inspired by Shelby of The Life and Loves of Grumpy's Honeybunch

half container of soft tofu
1 small shallot, minced
1 stalk of celery, thinly chopped
salt/pepper to taste

blend together until smooth. had i had more stuff on hand: tomatoes, chive, carrots, olives etc, i would've added them too. it reminded me of homemade veggie cream cheese and on toasted bread it's really tasty.

the chocolate tofu pudding is just like how i made Madonna's Chocolate Tofu Pie, except sans the crust. just a sweet treat snack. a spoonful or two is just enough for me.

i know i'm not the only one who has to scramble sometimes with just-about-to-rot food in the fridge. what do you do when you've got a bunch of stuff just at their prime and you're uninspired?

i know i sound like a broken record but it is for a good cause. it's Breast Cancer Awareness Month, (it's also National Blogger's Month too). i know that Charlotte, NC is having their walk this weekend and Baltimore is doing theirs on the 19th. if you can't participate in the walk, bake for the Boob Off. you can read about it here.

  2. We've used tofu in a Ceasar salad dressing before. Came out pretty good!

  3. this happens to me all the time. I either throw them out with weepy eyes and a guilty conscience or I try weird things with them that Hub hates.

    Guess what I've got to use by tomorrow? Tofu.
