pepper steak

i spent 24 hours in philadelphia last week. a whirlwind trip for work. i was hoping to pick up a philly cheesesteak sandwich but alas, just not enough time and really, at the end of the day, i just wanted to get home. i did make it to the market real quick in search of thinly sliced steak in the hopes of recreating it but i didn't find any. so i grabbed the stir fry beef instead. i had two green peppers at home to use up and jab did request a rice dish for lunch.


Pepper Steak

1 lb stir fry beef
1 small onion, thinly sliced
1 clove of garlic, minced
2 smallish green bell peppers, sliced
1 celery stalk, thiny sliced
2 tbl cornstarch
3 tbl soy sauce
1 tbl rice wine vinegar
a few tbl veggie oil


place the beef in a mixing bowl. add the corn starch, soy sauce, and rice wine vinegar. mix till the meat is coated. meanwhile, in a wok or large frying pan, heat up the oil. you gotta make sure the pan is nice and hot. working quickly, add the veggies, working it for a few minutes. personally, i like my veggies slightly soft (it's the braces thing) so i let it go til the onions had a nice tan. then i added the meat, again working very quickly and dodging splatters. i knew that since jab was going to heat up his lunch in the microwave, i cooked the meat just for a few minutes. i figured they would continue to cook on the plate anyway and then during the reheating process.

  4. jen - let me know how they turn out. another great way is to buy the beef steak and freeze just a smidge. THEN slice into thin strips, it tastes better. i went the lazy route and bought the meat already sliced.
