i discovered Pho #1 by accident over two years ago. i was on my way to Lowe's to buy paint so i could splash color in my newly purchased condo. i was sitting in the parking lot of some random strip mall and i saw it. it was like the clouds parted and there was bright sunlight just on this corner restaurant. god bless, i was so excited. and on top of that, they served other vietnamese dishes other than just pho. i've had a variety of stuff from them but for the most part, i usually get the cơm tấm bi cha trung thịt nướng (which is rice with shredded pork, pork chop and an egg thingy) with a side order of cha gio. i never finish the food, because it's always soooo good as leftovers for lunch and usually dinner the next day. yep, i stretch that stuff out.
anyway, my dad (peter) makes a mean cha trung (the egg thingy) which i guess is the vietnamese meatloaf part. i emailed him last week for the recipe and he hooked it up. i'm not sure how he would feel if i were to post the recipe so i won't. if you're interested, shoot me an email and i'll send it to you directly. the main ingredients are ground pork, crab meat, black fungus, and vermicelli. and of course, the egg to bind it all together. it was my first try and i was conservative with the seasoning so it was kinda bland. no worries, it's still good. it's eaten with just rice or you can even make a sandwich out of it. my teeth are still tender so i made my rice slightly wetter than usual, almost cháo (porridge) consistency. it was yummy. i dug it.
